Not sure if you have this or not but I do this very often.
TIP: Set reactiontime very high (about 50+) for an epic replay, use the time you have to experiment.
TIP: If you have already went for a good, strong punch/kick and you know the opponent is about to dodge or block it, just let it flow to make it realistic.
