I don't know when specific sounds play, but when Tori or Uke is lightly tapped, you will hear a flinching-ish sound.

When one is heavily punched, they will cough very roughly.

When they are violently dismembered, they will scream, choke, or cough again.

I think there are only 3 bruising sounds.

You can also look into your toribash folder. There all sounds and named correctly

It happens when both players hit each other.
